滑蛋蝦仁是家常小菜,但難做得好,不是炒出水,就是炒得過生似蛋糊多過滑蛋。「鳯城酒家」老闆譚國景入行超過六十年,炒過滑蛋蝦仁無數,他也說要炒得好還是要看功夫。

秘訣係要熄火炒,唔反。
